How To Desaturate & Saturate An Image Properly!

Image-Adjustment-Hue/Saturation. A new window might pop open depending on what version you are using. No matter what you will see Saturation slide bar all the way to the left so it shows -100. Click OK and then you see how simple it really is. See Screen Shot below.
